Here is an easy, healthy way to use up those left over roasted vegetables.
| Whisk together 2 eggs. |
| Lightly saute the veggies in a little butter - basically warm them through. |
| Dump the mixed egg over the veggies - salt and pepper to taste. |
| Scramble until egg is done. |
| Sprinkle with cheese. Cover with lid and let cheese melt. |
| Yummy. |
